<li>5 medium potatoes, peeled and cubed</li>
<li>1/2 cup chopped onion </li>
<li>1 1/2 cups chicken broth</li>
<li>1 Tbsp. butter</li>
<li>1 Tbsp. flour</li>
<li>1/4 tsp. salt</li>
<li>dash black pepper</li>
<li>1 cup milk</li>
<li>1 sprig of fresh dill</li>
<li>3/4 cup shredded cheddar cheese</li>
<li>4 slices of bacon, cooked and chopped</li>
</ul>
<b>Directions:</b><br />
Cook the potatoes and onion in a large saucepan with enough boiling water to cover the vegetables for about 15 minutes or until tender. Drain the water out and reserve 1 cup of the potato/onion mixture. Dump the rest of the vegetables and the chicken broth in a blender or food processor and blend for about 1 minute or until smooth. Set aside. In the same saucepan, melt the butter. Stir in the flour, salt, and pepper. Add in the milk and whisk the ingredients until it is thickened and bubbly. Cook and stir for 1 minute more. Stir in the reserved 1 cup of reserved potato/onion and the blended vegetable mixture. Cook and stir until heated through. Snip the sprig of fresh dill into the soup using scissors, stir to combine. You can add more salt and pepper to taste. Serve the soup in bowls and top each serving with cheese and bacon. I also served mine with slices of homemade sourdough bread and it was a hit with my family. Enjoy!<br />

<li><span itemprop="recipeInstructions">For dough: In a food processor combine flours, eggs,
spinach, saffron, beet, tomato, or blueberry, followed by oil.</span> </li>
<li>Knead dough on a floured surface to form a ball that is no longer sticky to touch. If dough is dry add water, 1 teaspoon at a time. Knead dough for 8-10
minutes (dough should feel very tight and should bounce back when
gently pressed), wrap in plastic and let sit for about 20 minutes before
using. Follow pasta machine instructions for rolling out the dough and
cutting into desired pasta type (or roll pasta dough by hand with a
rolling pin until very thin and cut into desired pasta type, using a
clean ruler for even noodles).<span itemprop="recipeInstructions"> </span></li>
<li><span itemprop="recipeInstructions">To dry: Line freshly cut pasta dough onto a pasta dry rack (or onto
clean clothes hangers), in a single layer and allow pasta to dry in a cool,

store in an airtight container or Ziploc bags until ready to use. Dry pasta will
hold for up to 1 month if stored in a cool, dry place. </span></li>

<li>Mix all ingredients in a your Kitchen aid mixer and finish off with your dough hook or used a food processor to blend all ingredients so that it forms into a solid ball. </li>
<li>Knead the dough on a lightly floured surface.</li>
<li>Roll out dough or wind through your pasta machine. </li>
<li>Cut into strips or wind through your pasta machine.</li>
<li>Cook the pasta in boiling water until al dente…it will only take 3-4 minutes if the pasta is fresh.</li>

Chill a medium mixing bowl and the beaters from your electric mixer. Combine all the ingredients into your chilled mixing bowl, and use chilled beaters to beat the mixture till soft peaks form.<br />

All I did was saute some peeled an deveined shrimp with butter, minced garlic, Johnny's garlic seasoning, dash of salt, and tossed in the pasta. The blueberry flavor in the pasta is a bit mild so that this pasta could go with just about any pasta dish. </span><br />

If you're a pumpkin lover then you have got to try this recipe. This sweet treat comes out moist and fluffy and this recipe makes plenty to share with loved ones who will love you all the more for sharing! The recipe comes from my friend Ali Eisenach's cookbook, <a href="http://www.lemonpoppyinc.com/buy/#!/When-Life-Gives-you-a-Garden/p/15621679/category=0">When Life Gives You a Garden</a>.<br />

It has become one of my favorite things that I own and it will probably appear in many more foodie pictures in the future. <br />

But back to the Pumpkin Bars!<br />
<b><br /></b>
<b>Ingredients:</b><br />
<ul>
<li>4 eggs</li>
<li>1 2/3 c sugar</li>
<li>1 c oil</li>
<li>16 oz can pumpkin</li>
<li>2 c flour</li>
<li>2 t baking powder</li>
<li>2 t cinnamon</li>
<li>1 t baking soda</li>
<li>1 t salt</li>
</ul>
<b>Directions:</b><br />
<br />
Beat eggs, sugar, oil, and pumpkin until fluffy. Add dry ingredients and mix well. Pour into a greased 15x10x1 inch pan. Bake at 350° for 25-30 minutes. Cool and frost with cream cheese frosting.<br />

<b>Cream Cheese Frosting Recipe</b><br />

<li>8 oz cream cheese, softened</li>
<li>1/2 c butter, softened</li>
<li>1 t. vanilla</li>
<li>3 c powdered sugar</li>

I made a <a href="http://nomemade-recipes.blogspot.com/2014/02/coconut-curry-seafood-soup.html" target="_blank">Coconut Curry Seafood Soup </a>which is in the previous post. We also had <a href="http://nomemade-recipes.blogspot.com/2010/08/vietnamese-chicken-salad-gio-ga.html" target="_blank">Vietnamese Chicken Salad</a>. Manapua or BBQ pork buns and egg rolls. The egg rolls and pork buns would have taken too much time to make in my busy schedule so i was fortunate to find some at our local Safeway grocery store.</div>

This is my all time favorite Vietnamese dishes it's tender sweet and salty goodness braised in coconut water. You're probably thinking why the boiled egg. The boiled egg compliments this dish especially if you take a a bite with a little rice, pork, and egg with each fork full. It's a traditional Tet dish. 2 pounds boneless pork shoulder (most of the fat trimmed off)<br />
2 cloves garlic, crushed<br />
1 small onion, diced<br />
1/4 cup fish sauce<br />
1/2 cup dark brown sugar<br />
8 hard-boiled eggs, shelled<br />
3 cups coconut water<br />
2 Tbsp oil for stir frying.<br />
8 cups cooked steamed rice <br />

Cut pork into about 1 inch serving pieces. Place in a large bowl and season with garlic, onion, fish sauce, and sugar. Let stand for 10 minutes.<br />

Heat oil in large 5 quart soup pot and brown pork lightly.<br />

Add half the coconut water and simmer for 15 minutes.<br />
<br />
Add the remaining coconut water and boiled eggs, continue to simmer for about 45 minutes until liquid has thicken and pork is fork tender.<br />

Serve over rice. <br />

Heat oil in large pot over medium heat. Cook and stir in ginger, lemongrass, and curry powder in oil for 1 minute. Pour in chicken broth over mixture and stir continually to incorporate irall ingredients. Stir in fish sauce and brown sugar; simmer for 15 minutes. Stir in tamarind soup base and coconut milk. Add shrimp, clams, mussels and halibut and cook till no longer translucent about 5-8 minutes. Serve in a bowl with 1/2 cup of rice and garnish with cilantro.<br />

Preheat the oven to 450 degrees F.<br />

the roast all over with the tip of a paring knife Sprinkle
on all sides with seasoning salt, garlic powder, and paprika and rub into the meat. Place roast in a shallow baking dish (I used a 9x11 ceramic baking dish) preferably fitted with a roasting rack (though not necessary). </div>

Refrigerate seasoned roast uncovered overnight or at least 8 hours. Remove from refrigerator and bring roast back to room temperature (30-60 mins). Rub all sides of roast with Yoshida's Teriyaki sauce and Worcestershire sauce. Put roast back on rack in baking dish with fat side up. Add the quartered onion and enough water or chicken broth to come 1-inch up the sides of the baking dish. Bake uncovered for 20-30 minutes.<br />
<br />
Reduce the oven temperature to 350 degrees F and loosely cover roast with aluminum foil tent. Continue
to cook until very tender, about 4-5 hours total cooking time. Approximately 30 minutes per pound or until internal temperate reads 160 degrees F with a meat thermometer. Remove from oven and let the roast rest for at least 30 minutes before carving.</div>

This turkey was so juicy and tender. There is a lot of prep work but you will end up with an amazing turkey that your guests will rave about. I started off with a Citrus Chinese spiced brine and glazed the turkey with a hoisin glaze. </span><br />

After the Chinese Spiced Brine has cooled somewhat
(no longer very hot, but still very warm), squeeze citrus wedges into
the liquid adding each rind after expelling juices. Next, add onion
wedges and stir. Cover stockpot and allow the brine to steep. Cool to
room temperature. (This will take a few hours.) If preparing brine the
day before brining turkey, chill brine in refrigerator until ready to
use. </span><br />

<span style="font-family: "Trebuchet MS",sans-serif;"><i><span class="bold">Assemble the Turkey & Brine in Brining Bag:</span></i>
Open zip-top brining bag wide and insert into large roasting pan with
high sides. Using a large liquid measure (I use my 2-cup glass measure),
scoop some of the brine and place it into bottom of large brining bag.
Insert the turkey over the brine breast side up. Using a slotted spoon,
place some citrus and onion wedges into the cavity of the bird and
continue to add the remaining brining liquid over the turkey in the
brining bag. Carefully close zip-top and expel as much air as possible.
(It helps to have two sets of hands at this point.) Gather top of
brining bag and twist. Secure brining bag at the top so that brine
covers entire turkey, tie bag closed. Transfer roasting pan, with turkey and brine
in brining bag, to refrigerator. Soak turkey for at least 12 hours or
up to 2 days. </span><br />

</i> The night before you plan to roast your turkey, remove it from brining
solution; discard brine and brining bag. Pat the bird thoroughly with
paper towels to dry completely inside and out. Loosen skin on breast of turkey being careful to not break the skin evenly smooth compound butter over turkey breast under skin, refrigerate it overnight uncovered in the roasting pan.</span><br />

<span style="font-family: "Trebuchet MS",sans-serif;"><i><span class="bold">Roasting:</span> </i>Preheat your oven to 325 degrees fahrenheit. Loosely place onion and orange wedges (use your zested orange) into turkey cavity. Place a loose foil tent on top of turkey. Roast turkey till internal temperature reaches 170 degrees at it's deepest point (part of the thigh, nearly to the hip joint, but taking care not to touch the bone). Remove turkey from oven, remove foil tent and baste with hoisin glaze. Increase oven temperature to 400 degrees. Place uncovered turkey back into oven and cook for another 10-15 minutes. Reglaze if necessary and cook for another 10-15 minutes. Let turkey rest for at least 1/2 an hour before carving.</span></div>

<li><span style="background-color: white; line-height: 19.1875px;"><span style="font-family: inherit;">Place the salmon fillets on the baking sheet, skin side down. Season with salt and pepper to taste. Bake for 10 minutes.</span></span></li>
<li><span style="background-color: white; line-height: 19.1875px;"><span style="font-family: inherit;">Whisk together the hoisin sauce, maple syrup, rice vinegar, lime juice, and ginger powder to create the glaze.</span></span></li>

Return the salmon to the oven and bake for an additional 10-15 minutes or until the salmon is cooked through.</span></span></li>

There is a little gem of a place there called <a href="http://www.tedsbakery.com/">Ted's Bakery</a> where they make the most amazing Chocolate Haupia Cream Pie. If you ever go, you must partake. If you don't know what Haupia is, it's a Hawaiian coconut pudding. Last night my friend Ali, over at <a href="http://www.lemonpoppyinc.com/">Lemon Poppy Inc</a> had a "Pie Party" where everyone made a pie and brought it to be photographed and tasted by everyone there. It's for her up and coming cookbook called Humble Pie. Keep a look out for it, it's going to be amazing. <br />

So for the party I made a Chocolate Haupia Cream Pie and I must say... it came out REALLY good. Here's the recipe that I used.<br />

<li>1 c milk</li>
<li>14 oz can coconut milk</li>
<li>1 c sugar</li>
<li>2 tsp coconut extract</li>
<li>1 c water</li>
<li>1/2 c corn starch</li>
<li>1 1/4 c semi sweet chocolate chips</li>
<li>1 c heavy whipping cream</li>
<li>2 Tbsp sugar</li>
<li>1/2 tsp vanilla</li>
<li>2-3 Tbsp chocolate shavings</li>

<i>The Crust:</i> Preheat your oven to 350 F. Bake your pie crust for 15 minutes or until golden brown. Allow it to cool.</div>

<i>The Filling:</i> Combine the milk, coconut milk, 1 c sugar, and coconut extract in a saucepan. In a separate bowl, combine the water and corn starch. Bring the milk mixture to a boil, but be careful because it will boil over if you're not watching. Reduce the heat to a simmer and whisk in the corn starch mixture. Whisk constantly until thickened, about 3 minutes. </div>

In a separate bowl, microwave the semi sweet chocolate chips for about a minute. Give it a good stir to make it smooth. Pour half of your coconut mixture into the chocolate bowl and whisk it together until smooth. Pour this mixture into your pie shell. Set it in the fridge for just a couple of minutes to help it cool and to keep the 2 layers from combining. Pull the pie back out and pour the remainder of the coconut mixture on top of the chocolate layer. Allow the pie to refrigerate for 5-8 hours. The longer it's in there, the better it will set.</div>

Use an electric mixer to whip it until soft peaks form. Put your whipped cream into a pastry bag prepped with a large star tip (I used a Wilton 2D tip) and pipe little stars of whipped cream all over the top of the pie. Then sprinkle with shaved chocolate. </div>

Punch down your dough and with a rolling pin roll out your dough to at least 20 inches long one way</span> <span style="font-family: Arial, Helvetica, sans-serif;">(see picture below). Using a pizza cutter you will cut horizontal 1/2 inch strips. Then cut the strips vertically 10 inches, 5 inches, two 2 inches, and then one inch. Body, head, 2 ears, and tail.</span></div>

Cupcakes always look so beautiful when you add a lot of height to them. However, I'm not a huge fan of a ton of frosting. To solve my dilemma, I came up with the simple idea that you can have a little bit of frosting but then pile it high with flavored whipped cream. You get the gorgeous look while keeping it light and airy. These started out as an experiment but have been a HUGE hit with friends and family so I love to make them for special occasions.</div>

Directions for the batter:<br />
Boil the water, butter and cocoa in a small saucepan. In a large bowl, layer the flour, baking soda, and salt. Pour the sugar on top of the flour mixture. Pour the boiling mixture on top of the sugar (this creates a fudge-like reaction as the two combine). Add eggs and sour cream and mix until all ingredients are combined. <br />

Other ingredients:<br />
8.5 oz bag Andes Creme de Menthe Thins<br />
1 recipe chocolate frosting (or buy premade from the store)<br />
1 c heavy whipping cream<br />
3 Tbsp sugar<br />
1/2 tsp pure mint extract<br />
green food coloring<br />

Other directions:<br />
Preheat the oven to 350 degrees F. Prepare your cupcake pan with paper cupcake liners, then fill the liners with cake batter to about 2/3 full. Cut 24 Andes mints in half (widthwise), and push both mint halves down into the center of each cupcake. Bake the cupcakes for 18-20 minutes. Once they've cooled, top them with a layer of chocolate frosting. Use a star tip to pipe a pretty swirl. In a chilled bowl, beat together the whipping cream, sugar, and pure mint extract. Add a few drops of green food coloring to give it a minty color. Put the flavored whipped cream in a piping bag already prepped with a large star tip. Pipe the whipped cream on top of the chocolate frosting and top it off with a whole Andes Mint.<br />

<li>In a Kitchenaid mixing bowl, stir in warm water and nonfat dry milk powder until it dissolves.</li>
<li>Add yeast, then sugar, salt, butter, egg, and 2 cups of flour.</li>
<li>Mix on low speed until ingredients are wet, then 2 minutes at medium speed.</li>
<li>Add 2 more cups of flour, mix on low speed until ingredients are wet, then 2 minutes at medium speed. (You can switch your attachment to the dough hook at this point for easier mixing.)</li>
<li>Add 1/2 cup flour again, mixing on low speed until wet, then 2 minutes at medium speed. You can add an additional 1/2 c if your dough is still too wet but I usually stop at 4 1/2 cups of flour total.</li>
<li>Dough should be soft, not overly sticky, and not stiff.</li>

<i>This is my favorite brand to use. Make sure you get the THIN wrappers, not doughy thick ones that are usually used for Chinese egg rolls and have the same consistency as won ton wrappers- they will burn in the oil before the raw pork filling has a chance to cook all the way. These thin wrappers stand up to the heat for a longer period of time.</i><br />

Directions:<br />

Fill a medium-sized pot with water, and bring it to a boil. Drop in the bean thread noodles, and cook them for 2-3 minutes. Drain the noodles, chop them so the pieces are roughly 1" long, and add them to a large mixing bowl. Soak the woodear mushrooms in a bowl of water for 15 minutes or until they are rehydrated. Chop them finely and add them to the mixing bowl. Add the carrots, onion, pork, garlic salt, pepper, and Fish Sauce. Combine everything well. This is your filling. Place about 2 rounded tablespoonfuls of filling into each wrapper and follow these instructions on how to wrap them up.<br />

I just made a delicious salsa verde and I HAVE to share the recipe because it is so amazingly good! The green salsa has a wonderful citrus bite to it with some other lovely textures and flavors. I first had this served to me over enchilada's and I was in heaven. I'm telling you, this sauce is so tasty that I want to bathe myself in it.<br />

<b>Ingredients:</b><br />
<br />
<ul>
<li>3 1/2 lbs tomatillos, papery husks and stems removed, rinsed</li>
<li>1 medium onion, peeled and cut into 1 inch chunks</li>
<li>5 large serrano chili or jalapeno peppers (or any peppers that you have on hand)</li>
<li>5 large cloves garlic, peeled</li>
<li>1 firmly packed cup roughly chopped fresh cilantro</li>
<li>2/3 cup fresh lime juice</li>
<li>1 tablespoon sea salt</li>

<b>Directions:</b><br />
Step 1: Place the tomatillos, onion, peppers, and garlic on a foil-lined baking sheet. Bake the vegetables at 500 degrees F for 20-35 minutes, turning them occasionally, until blackened in spots and the tomatillos are soft, collapsed, and leaking.<br />

Step 2: Place the roasted ingredients in a blender, just a few at a time, along with the cilantro, lime juice, and salt. Blend until smooth.<br />

And here's another great way to use your fresh salsa verde- <b>MAKE SWEET PORK!</b> Oh yummmmmmmm.... <b>And</b> <b>it only takes 3 ingredients</b>! All you have to do is put a <b>pork roast</b> in your crock pot for a few hours, until the meat is tender and falls apart easily. Drain off the excess liquid from the roast, but don't toss it out quite yet. Shred the pork in the crock pot. Pour in a jar of <b>salsa verde</b> and then add an equal portion of <b>brown sugar</b> as well. Now use some of that reserved pork juice to add to the mixture to help dissolve the brown sugar. Mix it all together and let it sit in the crockpot on low heat for another hour.<b> </b> Serve with tortillas, lettuce, tomatoes, cheese, and sour cream and then give the dish a side of <a href="http://allrecipes.com/recipe/lime-cilantro-rice/">Cilantro Lime Rice</a> and beans and you will be living the good life. <span style="font-family: "Century Gothic"; font-size: 10pt;">In a medium pot, bring 3 quarts of the tap water to a boil over medium heat. Put the kosher salt in a large bowl and slowly pour the boiling water over the salt. Stir to blend.</span></div>

Add the remaining 3 quarts of cool water. Add the ice to a cooler or bucket lined with a turkey bag large enough to hold the brine and the turkey. Pour the brine over the ice and use a large whisk to blend all the ingredients.</span></div>

Squeeze all air out of bag, tie off, and weight it down with a heavy plate. Allow the bird to sit in brine overnight for about 12 hours.</span></div>

Be sure to wipe the inside of cavity as well. Mix together butter and lemon zest. Gently lift the skin covering 1 breast of the turkey and spread half of the butter right on the meat under the skin. Repeat with other breast.</span></div>

Put on lower rack of the oven and roast until the internal temperature of the turkey taken from the thickest part of the thigh reads 170 degrees F on an instant-read thermometer, about 3 ½ hours. Remove turkey from oven to a cutting board or serving platter and tent with foil. Allow to rest for at least 30 minutes before carving and serving.</span></div>
